Every Sunday has been my meal prep day for years…think it started when Abe and I got married. By meal prep day, I mean I figure out the menu for the week, get all the things on my grocery list and prep Monday’s dinner to make a smooth Monday for the family.
We tend to eat a grain free, dairy free, refined sugar free, and a gluten free diet. We don’t have any allergies at my home. I just choose to eat this way. After watching so many documentaries and reading articles on foods, I made some changes on our diet a few years ago. Now this doesn’t mean that I won’t tear up donuts or gelato cause ummmm I will and so will my kids and I am okay with that. I just want that a large part of our diet is healthy and unprocessed.
I have been sharing a few recipes that we love to eat on FB. These are recipes that I have been using for a very long time. I received a few messages about them and thought it would be great if I shared them in one area for you, so they are easy to find. So here is my September meal prep Sunday round up 😉
This is one of my husbands favorite. I make it with gluten free pasta, use 1 pound of chicken vs 1/2 pound and double up on the pasta amount too. We never have leftovers of this!! If you are a fan of sun dried tomatoes….make this.
So Roman doesn’t like Chic-fil-a….GASP!!! I know its rare to come across anyone that doesn’t love Chic-fil-a but he LOVES these nuggets. He gets excited when he knows its whats for dinner!! As far as the seasonings go I eyeball it all and make sure all the nuggets are covered in the flour.
I bake these on a Sunday for the boys to have for breakfast during the week. If they ask for these their breakfast will include one muffin, bacon or sausage, and fruit. If you are wanting to just have muffins for breakfast you may want to double the recipe. These only make about 7 muffins unless seven muffins is enough. I am a mom of boys and they eat like teenagers…no lie!
